Fresh Herb Salad
Coriander 8g 1/4 oz 1/4 oz
Chervil 8g 1/4 oz 1/4 oz
Sprouts 8g 1/4 oz 1/4 oz

Read leaf lettuce, sliced 8g 1/4 oz 1/4 oz

Preparation
  1. Dice the tuna and 40g of the cucumber. Slice the spring onions very finely and combine it with the diced tuna and cucumber. Mix the ingredients for the tuna tartare.

  3. Combine the ingredients for the Asian vinaigrette. Combine the herbs for the herb salad, then add the Asian vinaigrette, lettuce and enoki mushroom. Mix well.
  4.  
  5. Slice the remaining cucumber thinly and place it on top of the cucumber, followed by the herb salad. Drizzle the remainder tuna dressing over the salad and serve.
